Hello! It's been quite a while since I've updated this blog. I thought it (and I) needed some time off in the summer. And since summer seems to last longer than ever now, that's extended to today.
Recipe recommendation--Brown Rice Salad with Fennel, Mushrooms, and Walnuts

Hey look...a recipe recommendation! I know, I've been dropping the recipe ball recently. But hey, it's real estate crazy season, so things get busy. BUT...I'm back today with a really fine, healthy recipe to try.
We've all been trying to upgrade our healthy food quotient at our house this year. Not a resolution, really, as we have always eaten a wide range of foods. But we wanted to be more intentional about it this year, which has meant adding in more vegetarian meals each week, and making sure we include whole grains more often.
This recipe, Brown Rice Salad with Fennel, Mushrooms, and Walnuts (courtesy of the great America's Test Kitchen), really ticks all those boxes. But more than that, it's absolutely delicious. Seriously.
One note: it's best within the first day or two of making it. Long than that and the rice can start to become slightly stale. But hey, there's not much chance it will last long anyway. :)
