Recipe recommendation--Karen's Pimm's Cup

In our house, Karen is the designated cocktail master. It became clear a few years ago that she had a natural talent for mixology, and we thought nurturing that talent was a great idea. So as we are at the traditional end of summer holiday weekend, I thought I'd throw out one more great patio drink to enjoy before the fall descends--the Pimm's Cup.
If you're unfamiliar with Pimm's, it is a gin-based liqueur that is very popular in England, though possibly not as well known here. But it's a delicious basis for a pretty great sunny day cocktail. It's not too strong, and it's very refreshing. Plus, it will help you use up all those cucumbers from your garden. Here it is!
Karen's Pimm's Cup
1.5-2 ounces Pimms #1 Cup Liqueur
Muddle mint and a slice or two of cucumber in a rocks glass. Add the Pimm's, stir to mix, and then add ice to the top of the glass. Top with ginger beer and garnish with an unpeeled cucumber wheel and a mint leaf. Enjoy!
