Shrub, you say? How is there a recipe for a shrub???
Settle down, I'm not talking about the plant. I'm talking about the delicious, centuries-old, vinegary tonic. Once used as a medicinal and a way to preserve seasonal fruits, the shrub now is a delicious base for a variety of cocktails and mocktails. And with the Madison-area weather looking springy and sunny this weekend, I thought it was the perfect time to get us all thinking about patio drinks.
Shrubs can be made from a variety of ingredients, from botanicals to rhubarb to berries. I'm linking today to America's Test Kitchen's Mixed Berry Shrub, which uses 2 cups of mixed berries, a cup of sugar, and white wine vinegar. It serves as a good template recipe, as these are generally the ingredient proportions. But honestly, substitute in as you see fit. Rhubarb season is right around the corner, hint, hint. In fact, the photo included is of a Barb Collins, which ironically isn't made with shrub, but it is patio-perfect. And I think this season I may make it with a rhubarb based shrub.
