Recipe recommendations return! It's been a busy few weeks and something had to give...so it was the blog (sorry 2 loyal readers!). But we're back today with a really delicious and pretty easy recommendation, once again from America's Test Kitchen...One Pan Roasted Salmon w. Potatoes and Brocccoli.
This is really straightforward way to make something a little elegant on a weeknight. And it's also highly interchangable. Earlier this week I made it with lake trout and asparagus, rather than salmon and broccoli. Superb!
One thing to make sure of; trust the recipe and follow it exactly, especially relative to the fish. If you don't, you'll overcook it. And no one likes overcooked salmon.
