When the weather starts to chill, I start to crave hot things from the oven. One of my favorite dishes is Baked Lemon Chicken. I found this recipe years ago on the Food Network website, on a day I was really craving baked chicken. There's just some about hot, juicy dish that hits exactly the right spot for me. I've made this countless times over the years, and I haven't changed one thing about it...uncommon for me, as I am a constant kitchen tinkerer. But it really is just perfect as it is. The lemony, oniony sauce makes the dish especially unctuous. Mashed or roasted potatoes, homemade sourdough, or roasted autumn vegetables (brussel's sprouts are especially good) are all a great match for this delicious dish.
