Every Friday this month has been Halloween Movie Night. I've made something Halloweenish, like caramel apples or Shadow Cake or Jack o' Lantern Pizzas. The we watch an old horror or monster movie on Turner Classic Movies. It's been super fun. Last week, though, was a real winner, when I found the Pumpkin Mini Cakes with Cream Cheese Icing recipe on the always superb King Arthur Baking website. I made them as cupcakes and they were easily some of the best cupcakes we've ever had. Moist, light, spicy, with that delicious cream cheese icing, they did not last very long. A few candy corn decorating the tops didn't hurt either.
