It's Friday which means it's recipe recommendation day! Huzzah!
This week it's a really delicious grilled chicken dish that involves few ingredients, a little brining, and whacking a chicken with a mallet: America's Test Kitchen's Chicken alla Diavola*.
Honestly, this might be one of the more delicious grilled chicken recipes I've ever eaten. And it takes less than an hour (usually) to finish cooking. It does take some tricky prep (and kitchen shears) to ready the chicken for malletting, but then you also get the added bonus of getting rid of some crazy world frustration by pounding a chicken with a mallett. So I think it's a net positive.
This dish also pairs well with last week's recipe, as once it's on the grill, you can basically just sit back and sip a cocktail while it cooks. Or two cocktails. Not that I'm telling you what to do.
