Okay, so I'm veering a bit today with the recipe recommendations. Rather than an actual recipe, I'm going with a place to find recipes...the Jacques Pepin Foundation instagram page. If you know me, you likely know that Chef Pepin is someone I admire a great deal. His life story, his attitude towards good food (and who should be able to enjoy it, i.e. anyone and everyone), and his commitment to learning and sharing knowledge are all reasons for my admiration. Jacques is in his mid-eighties now, so he's semi-retired from his career as the host of some of the best cooking show's you'll find. Instead, he's now doing really great, informative, and doable short recipe videos on the Foundation's instagram feed. Yes, he still features the odd French classic here and there, but often what he's focused on is how to make good food accessible to all, even those on very tight budgets. He recently did a series of high quality, easy budget recipes to give people struggling with food insecurity have wholesome, home cooked options.
