I return to the great America's Test Kitchen for today's recipe recommendation, Butternut Squash Galette with Gruyere. Recently, we started ordering from Misfits Market, one of a variety of "ugly" produce sites that have popped up (although the majority of the items aren't particularly ugly!). Each week we get a delivery of organic fruits and vegetables delivered, prices pretty discounted from what one would pay in the grocery store. Long story short, we've really liked it, but have also ended up with a surplus of butternut squash. What to do? Make this galette! I will be honest, it's not a recipe for beginning home chefs, but if you are comfortable with pastry, try this. I did add a bit of rosemary to the pasty, as well as upping the salt slightly (due to many comments on the recipe page), and added a clove of garlic to the filling. And the results were frankly stupendous. Very delicious! And a very good recipe to keep in your pocket for this autumn, when you're garden has provided you with a boatload of squash!
